Raspberry macarons with white chocolate ganache

A French classic that requires patience, but the result is worth every second. They're elegant, subtle, and delicious.

Ingredients for the macarons:

  • 100 g of almond flour
  • 100 g of icing sugar
  • 2 egg whites
  • 30 g of sugar
  • Pink food coloring (optional)

Ganache filling:

  • 100 g of white chocolate
  • 40 ml whipping cream
  • 1 tablespoon raspberry puree

Preparation:

  1. Sift almond flour and powdered sugar.
  2. Beat the egg whites with sugar until stiff peaks form.
  3. Incorporate the dry ingredients with circular movements.
  4. Form circles on a tray and let dry for 30-40 minutes.
  5. Bake at 150°C for 12-15 minutes.
  6. For the ganache, heat the cream with the raspberry puree, pour over the chocolate and mix.
  7. Fill the macarons once they are cold.

Presentation: You can store them in a decorative box and surprise someone special.
