Fresh, creamy, and fruity, these mini cheesecakes are ideal for summer or as a dessert for special dinners.
Base:
- 150 g of Maria cookies
- 75 g melted butter
Stuffed:
- 300 g of cream cheese
- 80 g of sugar
- 2 eggs
- 1 teaspoon of vanilla essence
Coverage:
- Pulp of 2 passion fruits
- 2 tablespoons of sugar
Preparation:
- Crush the cookies and mix them with the butter. Press them into individual molds.
- Beat the cream cheese with the sugar, add the eggs and vanilla.
- Pour over the base and bake at 160°C for 25 minutes.
- Cook the pulp with sugar until it forms a light jelly.
- Let everything cool and place the topping on the mini cheesecakes.
Suggestion: Serve very cold to enhance the tropical flavor.
