Mini passion fruit cheesecakes

Fresh, creamy, and fruity, these mini cheesecakes are ideal for summer or as a dessert for special dinners.

Base:

  • 150 g of Maria cookies
  • 75 g melted butter

Stuffed:

  • 300 g of cream cheese
  • 80 g of sugar
  • 2 eggs
  • 1 teaspoon of vanilla essence

Coverage:

  • Pulp of 2 passion fruits
  • 2 tablespoons of sugar

Preparation:

  1. Crush the cookies and mix them with the butter. Press them into individual molds.
  2. Beat the cream cheese with the sugar, add the eggs and vanilla.
  3. Pour over the base and bake at 160°C for 25 minutes.
  4. Cook the pulp with sugar until it forms a light jelly.
  5. Let everything cool and place the topping on the mini cheesecakes.

Suggestion: Serve very cold to enhance the tropical flavor.
